Lake Race 2018: May 31 - June 2


One of the most anticipated events of the year, Lake Race 2018 will feature more than just boat races! The event will kick off on Thursday, May 31st with the Festival of Speed from 4-9 pm at Big Thunder Marine Showrooms in Lake Ozark. Friday, June 1st from 4-11 pm is the Meet & Greet Street Party on the Bagnell Dam Strip. The races will take place on Saturday, June 2nd, with an awards ceremony to follow. Beavers at the Dam is the official viewing spot for the event, and there will be an after party with fireworks there. The awards will take place at Camden on the Lake.

Hot Summer Nights: June 8


This classic vehicle cruise is a family-fun night on the Bagnell Dam Strip in Lake Ozark. The event will run from 6-11 pm, rain or shine. Both participation and admission are free. All makes and models of cars, trucks and motorcycles will line the Strip and cruise around. This kid-friendly event offers games, activities, live entertainment and more!

The Canine Cannonball: June 8-10


How far can your dog jump? Find out at the annual Dock Dogs jumping contest will be held at Dog Days again this year! Canine athletes will compete in Big Air, Extreme Vertical and Speed Retrieve at this family friendly event. Admission to this family-fun event is free.

Folds of Honor Charity Fundraiser, Golf Tournament & Concert: June 15-16 


Camden on the Lake is teaming up with Folds of Honor, Budweiser and Osage National Golf Club to bring another Folds of Honor Charity Fundraiser to the Lake of the Ozarks area. Folds of Honor honors the sacrifice of America's fallen and disabled service members by providing educational scholarships to their children and spouses. Sign up your team to play in the Friday afternoon golf tournament at Osage National and then come rock out with us all weekend at the Horny Toad Entertainment Complex, featuring Walker McGuire and Hudson Drive. 7 Tips for Your Memorial Day BBQ

Memorial Day Weekend is finally here! How many of you are kicking off the summer season at our Lake of the Ozarks resort this weekend? A summer holiday celebration just wouldn't be the same without a BBQ right? Today's blog from Summerset Inn Resort offers some tips you can use to BBQ this weekend, either at our resort or your own place.

BBQ Tips and Tricks


1. Allow Your Grill to Heat Up. 


You'd be surprised at the number of people that throw meat on a cold grill and then fire it up. When it comes to good BBQ, you don't want to be in a hurry. By letting your grill heat up for at least 20 minutes, maybe more when you're using charcoal, you're allowing both the grill and the surrounding metal to come to an even temperature. This leads to a more efficient, controlled and safe cooking surface, as well as more evenly cooked meat.

2. Consider Tenderizing and Marinating. 


Not everyone does this, but tenderizing your meat with a tenderizing hammer will help the meat cook more evenly and stay more tender. Marinating your meat is another way to ensure it has great flavor and doesn't get dried out. However, you don't need to over-marinate it. Chicken and pork only need about an hour or two to marinate, while red meats can be soaked overnight if you want.

3. Don't Add BBQ Sauce Too Early. 


Keep in mind that BBQ sauce, while very tasty, is not a marinade, it's a condiment. It has a lot of sugar in it, and sugar can easily burn on the grill. Wait to brush the BBQ sauce on just before the meat is done cooking. Quickly mark the meat on the grill for a nice, caramelized flavor and then pull it off.

4. Soak Your Kebab Skewers in Water. 


If you're making kebabs for your BBQ, soak the wooden skewers in water first to keep them from burning. If you're using metal skewers instead, consider wiping them with a piece of paper towel dipped in oil to ensure the food doesn't stick to them.

5. Use the Vent on Your Grill. 


Many people don't realize the importance of the vent on their grill or how it works. Vent openings, both above and below the fire, aid in controlling both the temperature inside and the way your food cooks. Fully open vents on both sides create more heat. By rotating the lid and changing the position of the top vent, you can control the speed of your cooking. To create a convection effect, place the top vent opening on the opposite side of your bottom vent opening.

6. Let Your Meat Sit After Cooking. 


The meat is done and your mouth is watering! Don't be to quick to take a bite though, you should let your meat sit for a few minutes after taking it off the grill. This will help seal in the juices and keep the meat from drying out. Be sure not to cut the meat until you're ready to serve and eat it. Bonus Tip: Use tongs instead of a fork to avoid poking holes in your meat while it's cooking, as that can release those juices too.

7. Under is Better Than Over. 


When it comes to cooking meat, it's always better to be under than over on cook time. You can always throw something back on the grill to cook longer, but if you've over-cooked it, there's no fixing that mistake. If you're uncertain how long something has been cooking, go ahead and pull it off and check it out. Using a meat thermometer is the best way to ensure your meat is properly cooked, and to avoid the possibility of a foodborne illness.

Economy Apartment 
Our economy apartments each sleep a maximum of 6 people. They offer two small bedrooms, each with double beds. You'll also enjoy a hide-a-bed, a kitchenette and a bath with shower. There are 3 of these apartments available.

Deluxe Apartment
Each of our deluxe apartments sleep up to 6 people and feature 2 large private bedrooms, one with a king bed and the other with a queen bed. The apartments also come with a hide-a-bed, a kitchenette and a bath/shower combo with two vanities. There are 3 of these units available.

2 BR, 2 BA Apartment
Our 2 bedroom, 2 bath apartment sleeps a maximum of 5 people. This lakeside king apartment features a bathroom and kitchenette, plus a bonus bedroom with a double bed and a 2nd bath. There is also a hide-a-bed in this unit.

Family Apartment 
Our family apartments sleep up to 8 people. Each one features 2 bedrooms, a daybed adjacent to the living room and a hide-a-bed. You'll also enjoy a kitchenette and a bath with a shower. There are 8 of these units available.

Villa Cottage 
This cottage style room sleeps up to 6 people and features 2 private bedrooms, each with a king bed. The unit also features a hide-a-bed, a kitchenette, a fireplace, and two bathrooms, with a whirlpool tub in the master.

Captain's Quarters
The Captain's Quarters will sleep up to 10 people and features 5 bedrooms and 3 baths! Inside you'll find 2 king beds, 2 queen beds and 2 double beds. The kitchen offers a garbage disposal, dishwasher and microwave.

Mother's Day Treats to Spoil Mom

Mother's Day is this weekend! How are you celebrating? From flowers and chocolates to taking mom out for dinner or a movie, there are plenty of ways to make her feel special this Sunday! Consider spoiling her with one of these sweet treats. While these recipes are pretty easy for children to whip up, dad or an older sibling might have to help with a few things!

Cheesecake Stuffed Strawberries

This fun and fruity snack is the perfect no-bake treat for mom on Mother's Day!

Ingredients: 

  • 1 cup Cream Cheese, softened 
  • 1/2 cup Heavy Cream 
  • 1/4 cup Powdered Sugar 
  • 1 pint Strawberries, bottoms and tops sliced off and hollowed out
  • Crushed Graham Crackers, for garnish 

Directions: 

  1. With a mixer, beat cream cheese for 2-3 minutes. Add the heavy cream and powdered sugar and beat until fluffy. 
  2. Transfer the mixture to a piping bag and pipe into the strawberries. 
  3. Garnish with crushed graham crackers and serve. 

Frozen Banana Bites

Ingredients: 
  • 2 Bananas, peeled and sliced (about 3/4 inch chunks) 
  • 1/3 cup Bittersweet Chocolate Chips 
  • 1/3 cup Creamy Peanut Butter
  • a pinch of Sea Salt 
  • Unsweetened Shredded Coconut 
Directions: 
  1. Place the banana chunks on a large plate lined with parchment paper. Place in the freezer for about an hour. 
  2. Spread the shredded coconut on a large plate. 
  3. Combine the chocolate chips, peanut butter and sea salt in a microwave safe bowl. Microwave on high for about a minute, and stir until smooth.
  4. Dip the frozen banana chunks in the chocolate mixture. Then place it on the shredded coconut and roll lightly to coat all sides. 
  5. Transfer the covered banana chunks back to the freezer for another hour before serving. 

Lemon Cookie Cream Cheese Truffles

Ingredients: 
  • 12 Lemon Cookies, either store bought or use this recipe (without the frosting).
  • 1/2 package of Cream Cheese
  • 1 Tbsp Lemon Juice 
  • 1 1/2 cups White Chocolate Chips
  • 1/2 tsp Lemon Extract 
  • Colorful Sprinkles, for garnish 
Directions: 
  1. Crumble up the cookies and mix them with the cream cheese. Then mix in the lemon juice. 
  2. Roll the mixture into balls and put them in the freezer for about 30 minutes. 
  3. Then melt the white chocolate chips, and stir in the lemon extract. 
  4. Drip the balls into the chocolate mixture, and sprinkle them immediately before the chocolate cools. 

S'mores Mousse

Not only is this treat a delicious new way to enjoy a favorite childhood flavor combination, but you'll be amazed at how easy it is to whip up! 

Ingredients: 
  • 1 cup Crushed Graham Crackers, plus more for topping 
  • 2 Tbsp Butter, melted 
  • 2 cups Mini Semisweet chocolate chips, plus more for topping 
  • 3 cups Heavy Whipping Cream, chilled 
  • 1/2 c. Marshmallow Creme 
Directions: 
  1. To make the crust, combine graham crackers and butter. Divide the mixture evenly between 2-3 trifle dishes and press down to form a crust. 
  2. To make the chocolate mousse, beat 2 cups of heavy whipping cream until soft peaks form, 2-3 minutes. 
  3. Place chocolate chips in the microwave and heat in 20-second intervals, stirring in between, until the chocolate has melted. Fold the chocolate into the whipped cream, mixing it until just incorporated (a few streaks are okay). 
  4. Refrigerate the mousse for at least one hour. 
  5. To make the marshmallow whipped cream, beat the other cup of whipping cream to form soft peaks, 2-3 minutes. Then fold in the marshmallow creme. 
  6. To assemble the dessert, top each graham cracker filled cup with chocolate mousse. Then add a dollop of marshmallow whipped cream. Garnish with additional chocolate pieces and crumbled graham crackers.
