5 Festive Treats to Make for the Holidays

When you think about the holidays, what's the first thing that comes to mind? Maybe it's the Christmas lights and decorations, Santa and presents or possibly the baking and food! If you love to bake and make treats and food creations, then this blog is for you. Your favorite resort at the Lake of the Ozarks has gathered up some festive recipes for you to try this holiday season!

Rice Krispie Wreaths

Ingredients: 

  • 6 cups Rice Krispie cereal 
  • 1 - 10 oz bag of mini marshmallows 
  • 3 Tbsp of butter 
  • 1 Tbsp green food coloring (more if using liquid) 
  • 1 cup sweetened coconut 
  • Red Icing (for decoration) 

Directions: 

  1. Line cookie sheets with waxed paper. 
  2. In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat and stir in the food coloring. 
  3. Add coconut and Rice Krispies. Stir until well coated. 
  4. Using a 1/4 cup measuring cup (coated with non-stick spray), scoop the mixture onto the wax paper. With your hands (coated), shape the scoops to form wreaths. 
  5. Use the icing to put bows or other decorations on your wreaths. 
  6. Allow to set. Treats are best served on the same day they are made.

Elf on the Shelf-Inspired Mischief Munch

Ingredients: 
  • 2 cups French Toast Crunch cereal 
  • 1 cup Cookie Crisp cereal 
  • 2 2/3 cup Life cereal 
  • 1 cup mini marshmallows 
  • 1/2 cup red and green M&Ms 
  • 12 oz. white chocolate 
  • 2 Tbsp holiday sprinkles
  • 1/4 cup mini chocolate chips 
Directions: 
  1. In a large bowl, combine all cereals, mini marshmallows and M&Ms. 
  2. Melt white chocolate in a microwave-safe bowl, in 30-second intervals, stirring in between. (Ensuring not to burn it.) Then pour over cereal mixture, stirring to coat everything. 
  3. Transfer mixture to a parchment-lined baking sheet, top with holiday sprinkles and mini chocolate chips, and refrigerate until firm, about 25 minutes.

Grinch Cake 


Ingredients: 
  • 2 boxes pound cake mix (and whatever ingredients the box calls for) 
  • Heart cookie cutter
  • Red and green food gel color 
  • Loaf pan 
  • Green frosting
  • Red heart sprinkles
Directions: 
  1. Mix one box of pound cake following the directions on the box. Add a few drops of red food coloring at a time, until you get the red color you like. 
  2. Once the cake is baked, let it cool and the then cut into even slices.
  3. Then use the heart shaped cookie cutter to cut out as many hearts as it takes to lay them face to face from one end of the pan to the other end. 
  4. Make sure it is a snug fit, but leave room at each end for the green cake mix. 
  5. Mix the second cake, and add some green food coloring. 
  6. Pour the green batter around the heart cutouts. 
  7. Tap the pan on the counter so that the batter will fall down the sides of the hearts. 
  8. Bake it according to the package directions. 
  9. Next, frost the cake with green frosting and add some heart sprinkles.

Oreo Coal

Ingredients: 

  • 40 Oreos 
  • 1 - 8 oz. block of cream cheese, softened 
  • 16 oz. chocolate almond bark 
  • 1/3 cup cocoa powder
Directions: 
  1. Using a food processor, grind Oreos into crumbs. Transfer crumbs to a medium bowl and add cream cheese. Use a fork to mix until well combined. 
  2. Using about 1 Tbsp of the mixture per ball, form misshapen balls of the Oreo mixture. 
  3. Place the balls on a plate, and place the plate in the fridge for about 30 minutes to an hour to firm up. 
  4. Microwave the almond bark in 15 second increments, until melted and smooth (ensuring not to burn it). 
  5. Using a fork or toothpick, dip each ball into the melted chocolate, and set onto parchment paper. 
  6. Let the chocolate firm up and then dust the balls with cocoa to complete the "coal" look. 
  7. Store the balls in the fridge until ready to serve.

Peppermint Crunch Puppy Chow

Ingredients: 

  • 5 cups Rice Chex cereal 
  • 10 oz white chocolate almond bark 
  • 1 cup crushed candy canes
  • 1 cup confectioners' sugar 

Directions: 

  1. Pour the cereal into a large bowl. 
  2. Melt the almond bark, and pout it over the cereal. Stir until the cereal is completely covered.
  3. Fold in the crushed candy canes. 
  4. Pour the confectioners' sugar into a zipped-top bag. Then pour the chocolate covered cereal into the bag.
  5. Seal the bag and shake until all the cereal is coated with the sugar. 
  6. Store at room temperature for up to two weeks.

Spice Up Your Thanksgiving Feast

...with These Twists on Your Traditional Favorites


Are you tired of the same old recipes every Thanksgiving? Surprise your guests by creating unique dishes that are similar, yet so very different, from the traditional dishes you usually prepare. Here are a few recipes your favorite Lake of the Ozarks resort gathered that put a little twist on your favorite Thanksgiving dishes:

Peach Stuffing

Ingredients: 

  • 1 loaf rustic Italian bread, cubed
  • 2 medium onions, diced 
  • 4 tsp minced garlic 
  • 1 bunch fresh parsley
  • 2 tsp finely chopped fresh thyme
  • 1/2 cup thawed frozen orange juice concentrate
  • 1 stick unsalted butter
  • 4 celery stalks 
  • 2 Tbsp coarsely chopped fresh sage
  • 1 can peach halves in heavy syrup, drained (reserve the syrup) 
  • Salt and pepper, to taste
Directions: 
  1. Arrange bread in a single layer on baking sheet, let stand, uncovered, at room temperature overnight. (Or you can bake the bread at 300 degrees for about 15 minutes to dry it out, but not brown it.) 
  2. Preheat your oven to 350 degrees. 
  3. Melt butter in a large skillet over medium-high heat. Add onions, celery and garlic, season with salt and pepper. Cook, stirring occasionally, until softened, about 5 minutes. Stir in herbs, and cook for 2 minutes.
  4. Transfer the mixture to a large bowl. Add the bread and toss to combine. 
  5. Whisk peach syrup into the orange juice concentrate, then add to the bread mixture with the peaches. 
  6. Spoon the stuffing into a buttered 9x13 baking dish, cover with parchment paper, then foile, and bake for 25 minutes. Uncover the dish, and bake until golden brown, about 15-20 minutes. 

Chipotle and Coca-Cola Braised Sweet Potatoes

Ingredients: 

  • 6 large sweet potatoes 
  • 1 1/2 cups Coca-Cola
  • 1/2 cup chicken or vegetable broth 
  • 3 garlic cloves
  • 2 chipotle peppers in adobo sauce + 2 Tbsp adobo sauce from the same can 
  • 4 Tbsp butter, cut into pieces
  • Salt and pepper, to taste

Directions: 

  1. Preheat oven to 400 degrees. 
  2. Scrub sweet potatoes and slice into 1-inch thick slices (no need to peel). Arrange in a baking dish or roasting pan with at least 2-inch sides. 
  3. In a blender, combine coca-cola, garlic, chipotle peppers and adobo sauce. Puree until smooth, for about 1 minute. Then pour mixture over the sweet potatoes. Season generously with salt and pepper. 
  4. Top off with pats of butter. Then cover with foil and bake for 25 minutes. Remove the foil, then bake an additional 20 minutes, or until tender. 
  5. Taste and adjust seasoning with additional salt and pepper if needed. 
  6. Serve as is or with some extra toppings such as grapes and greek yogurt, or spinach, bacon and pecans. 


Bourbon-Cranberry Compote 


Ingredients: 
  • 1 - 12 oz bag of cranberries, fresh or frozen 
  • 2/4 cup sugar 
  • 1/2 cup apple juice
  • 1/4 cup bourbon 
Directions: 
  1. In a saucepan, combine the cranberries, sugar, apple juice and bourbon. 
  2. Simmer, stirring occassionally, until the cranberries begin to burst and the sauce thickens, about 20-25 minutes. 
  3. Let cool before serving.

5 Fun Facts About Halloween

Since Halloween falls on a Tuesday this year, we'll be celebrating with festivities all weekend long! To get you in the spirit, Summerset Inn thought it would be fun to share with you some interesting facts about Halloween, it's history and traditions.

Halloween Fun Facts 


1. Trick-or-treating is traced back to the European practice of "guysing" in which costume-wearing participants would go door-to-door performing choreographed dances, songs and plays in exchange for treats. In early versions of trick-or-treating, men paraded door to door, with the boys following, begging for coins. Most of these trick-or-treaters were poor and actually needed the money. This begging mostly stopped by the 1930s, but re-emerged later to distract children from pulling Halloween pranks.

2. Halloween is actually more Irish than St. Patrick's Day, as its roots come from the Celtic festival for the dead, Samhain. On this day, the Celts believed the ghosts of the dead roamed the Earth, so people would dress in costumes and leave "treats" on their doorstep to appease the roaming spirits. This Halloween tradition was eventually disrupted and adapted by Christian missionaries into celebrations closer to what we celebrate today.

3. Originally, Jack-O-Lanterns were made from turnips, beets and potatoes. According to Irish folklore, a man named Stingy Jack tricked the Devil into agreeing that if he ever died, his soul would not be claimed for hell. When Jack died, God decided he wasn't fit for heaven, so his soul was left roaming the Earth with only a burning coal for light. Jack put the coal in a turnip as a lantern. Based on this myth, the Irish carved scary faces into turnips, beets and potatoes to scare away Stingy Jack and other spirits.

4. Halloween used to be considered a great night to find your soulmate. In some parts of Ireland, people celebrated Halloween by playing romantic fortune-telling games. These games allegedly predicted who they’d marry and when. Since Halloween was one of the main celebrations of the year where young people could mingle with the opposite sex, it was also considered a good day to scope out a sweetheart.

5. Halloween was originally referred to as "Cabbage Night." This came from a Scottish fortune-telling game, where girls used cabbage stumps to predict information about their future husbands. Many teens however skipped the games and simply threw the cabbages at their neighbors. Some pranksters in the northeastern United States keep up with this stinky tradition of collecting rotten vegetables and leaving them near their neighbors' doors.

Fall Events at Lake of the Ozarks

Thunder Mountain Park Fall Festival - October 1-31


Throughout the month of October, Bridal Cave & Thunder Mountain Park will be hosting a Fall Festival full of excitement! The everyday wonders of Bridal Cave & Thunder Mountain Park will be joined by tasty autumn treats (pumpkin fudge, s'mores, caramel apples, and more,) duck races, a hay bale maze, corn crib, Hay Bale Mountain, and so much more! On weekends, there will be demonstrations of sarsaparilla making and pumpkin painting, as well as incredible live entertainment, plus take home your own pumpkin from the thousands that will be lining our Pumpkin Trail. MECCA Family Farm Pumpkin Patch & Fall Attractions - October 1-29


The pumpkin patch will be open every Saturday and Sunday throughout the month of October from 10:00 am to 5:00 pm. Fall activities include corn crib, corn cannon, big slide, face painting, photo ops, petting zoo, hay rides and a maize walk.

Fall Big Bass Bash - October 7-8 


The Fall Big Bass Bash is back! Amateur anglers from across the Midwest will gather at the Lake of the Ozarks for this annual event. 17th Annual Osage Beach Fall Festival - October 14 


The 17th Annual Osage Beach Fall Festival will take place October 14 from 10:00 am to 5:00 pm. The event will include free activities for the kids, such as a petting zoo, four large inflatables/bounce houses, bow wow contest, fishing and pellet shooting and displays. There will also be great food, art and crafts booths, local Fire, Police& EMS displays, a hayride, live entertainment and an evening concert at the park.

32nd Annual Fall Harbor Hop - October 14 


Visit over 40 of participating locations on the water to collect a winning poker hand! Enter the Harbor hop by stopping at any of the check points and paying an optional $20 donation. The 1st card is drawn at the checkpoint where the hand is purchased; 6 additional cards are obtained by hopping to six more checkpoints drawing one card, per hand, at each location. OkToaderFest at The Horny Toad - October 14

Apple Butter Days & Fall Festival - October 20-21


Many crafters with a variety of items will be setup at the Camden County Museum on October 20 & 21 from 9 am to 4 pm both days. There will be craft demonstrations and a quilt raffle, as well as apple butter and apple pies available. Admission is free. A chili and soup lunch will be available for a donation.

4 Health Benefits of Taking a Vacation

Did you know that the average American worker only takes half of his or her vacation time? Not only is taking a vacation fun, but it has health benefits too! Studies have shown that taking time away from work can have both physical and psychological health benefits. In today's blog, Summerset Inn Resort discusses 4 health benefits of taking a vacation.

1. Decreased Depression.


Who doesn't feel better while on vacation? Vacations have been known to lift spirits for years. A study conducted by Marshfield Clinic determined that women who take vacations at least twice a year were less likely to suffer from depression. A survey from the University of Pittsburgh's Mind Body Center found that leisure activities, including vacationing, contributed to higher positive emotion levels and less depression.

2. Reduced Stress Levels.


A study by the American Psychological Association concluded that vacations work to reduce stress by removing people from activities and environments that tend to be sources of stress. While it may seem obvious that vacationing reduces your stress levels, the longer term effects are not as obvious. Studies found that the lower stress levels found in workers on vacation actually last up to five weeks after returning to work. These vacationers were less likely to have stress-related complaints such as headaches, backaches and heart palpitations.

3. Decreased Risk of Heart Disease.
