3 Ways to Use Your Leftover Turkey

Let's face it, how many of us actually eat all of that giant turkey we cook for Thanksgiving dinner? Most of us eat leftover turkey for days! In today's blog, your favorite Lake of the Ozarks resort offers a couple recipes to make with your leftover turkey. Enjoy!

Turkey Casserole 


If you have lots of leftovers, more than just turkey, try this turkey casserole. Tired of eating turkey already? This recipe can be frozen and eaten at a later date!

Ingredients:
  • 3 Cups Leftover Stuffing 
  • 4 Cups Leftover Turkey 
  • 2 Cups Leftover Corn (and/or other veggies) 
  • 3 Cups Leftover Mashed Potatoes 
  • 1 Cup Shredded Cheddar Cheese 
  • 3/4 Cup Mayo (or Miracle Whip) 
 *Measurements are approximate; you can use whatever you have left. 

Directions: 
  1. Mix the turkey, corn and mayo together in a bowl. 
  2. Mix the potatoes and the cheese together. 
  3. In a large foil pan, layer the ingredients starting with the stuffing in the bottom. 
  4. Then add the layer of your turkey mixture. 
  5. Top that with the layer of mashed potatoes and cheese. 
  6.  Either cover with foil and freeze OR place it in the oven at 375° for 30 to 40 minutes or until heated.

Slow Cooker Turkey Noodle Soup


A great way to get the most out of your Thanksgiving turkey is to use the leftover carcass to create a delicious turkey noodle soup!

Ingredients for Stock: 
  • 1 Turkey Carcass 
  • 1 Onion 
  • 1 Celery Stalk 
  • 1 Carrot 
  • 1/2 tsp Salt 
  • 1/2 tsp Pepper 
  • 1 Bay Leaf 
  • 1/2 tsp Poultry Seasoning 
  • 2 tsp Instant Chicken Bouillon Granules
  • 12 Cups Water 

Ingredients for Soup: 
  • 2 Onions
  • 1 Garlic Clove 
  • 2 Carrots, peeled and chopped 
  • 2 Stalks Celery, chopped 
  • 1/2 tsp Dried Thyme 
  • 1/2 tsp Salt 
  • 1/4 tsp Pepper 
  • 2 Cups Turkey, shredded
  • Noodles, uncooked 
  • 2 Tbsp Fresh Parsley Leaves, chopped 

Directions:
  1. To make the stock, place the turkey carcass is your slow cooker. Add all ingredients listed above for the stock. Cook on low overnight. 
  2. The next morning, strain the broth and pour it back in the slow cooker. 
  3. Remove turkey meat from the bones and set aside. 
  4. For the soup, combine onions, garlic, carrots, celery, thyme, salt and pepper with the broth in the slow cooker.
  5. Cook on high for 4 hours. 
  6. Add turkey, noodles and parsley. 
  7. Cook another 1/2 hour. 
  8. Enjoy your turkey soup! 

Turkey Salad 


For a quick lunch option, consider using leftover turkey to create a turkey salad sandwich!

Ingredients: 
  • 1 1/2 Cups Cooked Turkey, diced
  • 1/2 Cup Apple, unpeeled and diced 
  • 1/2 Cup Mayo (or Miracle Whip) 
  • 1 1/2 tsp Curry Powder 
  • 1/4 tsp Ground Ginger 
  • 1/4 tsp Pepper 
  • 1 Stalk Celery, chopped 
  • 2 Green Onions, chopped 

Directions: 
  1. In a bowl, mix all ingredients together. Refrigerate.
  2. Spread the mixture between 2 slices of your favorite bread, and voila, you have a delicious turkey salad sandwich!

7 Reasons Everyone Needs to Take a Vacation

One thing many American's take for granted is their vacation time. Many people feel they are too busy to take a vacation or don't have the money to take a vacation. Get a Jump Start on Your 2017 Vacation Planning

With 2016 coming to a close in just a couple short months, now's the time to think about how your 2017 is going to look. Do you have plans for how to make next year even better than this one? Do those plans include traveling? If not, they should! A vacation is something that everyone can benefit from, giving you time to relax, de-stress and re-charge. Thanks for a Great Season at the Lake of the Ozarks!

Our rental season has come to a close and winter is just around the corner! We want to take this opportunity to thank all of our Summerset Inn guests for a great year in 2016. Memorial Day Weekend


Although your favorite waterfront resort at the Lake of the Ozarks opens mid-March, Memorial Day Weekend is really the kick-off to our rental season. The weather is getting warm enough to get out on the Lake and the kids have just finished up school. That last weekend in May is the perfect time to hit the Lake of the Ozarks. Last year, there were plenty of family-friendly activities happening all over the Lake including the annual fireworks displays! The Best Golf in the Midwest

Lake Race Powerboat Races


One of the biggest annual events at the Lake of the Ozarks, Lake Race 2016, took place June 3-5. The contest takes place at Dog Days Bar & Grill, which is in walking distance from our Lake of the Ozarks resort! Every year, in mid-June, canine athletes compete in Big Air, Extreme Vertical and Speed Retrieve at this FREE, family-friendly event!

4th of July Weekend


Arguably one of the most popular weekends to visit the Lake of the Ozarks is July 4th Weekend! The largest unsanctioned boat races in the U.S. take place right here on our Lake each August! This is definitely one of the most anticipated events of the year, and features over a week of fabulous family-fun events leading up to the actual races. Walk around the vendor villages and watch the races on the jumbotron, or hit the water in your boat and tie up in a line to watch the races live and in-person! 4 Recipes to Try This Halloween

Halloween is almost here, and this weekend will be filled with trick-or-treating, hayrides, parties and more! Your favorite resort at the Lake of the Ozarks has gathered a few Halloween inspired recipes. If you're hosting a Halloween party, be sure to try out some of these wickedly good treats!

Halloween Peanut Butter Spider Cookies

Ingredients: 
  • 1/2 c shortening
  • 1/2 c peanut butter 
  • 1/2 c brown sugar 
  • 1/2 c sugar 
  • 1 egg
  • 1 tsp vanilla 
  • 2 Tbsp milk 
  • 1 3/4 c flour 
  • 1 tsp baking soda 
  • 1/2 tsp salt 
  • 1/4 c sugar, for rolling 
  • 48 mini Reese's cups, unwrapped and frozen
  • 96 candy eyes 
  • 1/2 cup chocolate chips

Directions:  
  1. Preheat oven to 375 degrees. 
  2. In a large bowl, beat together shortening, peanut butter, brown sugar, sugar, egg, vanilla and milk. 
  3. In a medium bowl, whisk together flour, baking soda and salt. Gradually add dry mixture to wet mixture and beat until blended. Form into 1 in. balls. 
  4. Roll in sugar and place a couple of inches apart on ungreased cookie sheet. 
  5. Bake 10-12 minutes or until golden. 
  6. Remove from oven and immediately, gently press an upside down frozen peanut butter cup on top of each cookie. Transfer to a wire rack to cool. 
  7. Attach the candy eyes while chocolate cup is still slightly soft. If they don't attach, use a little bit of melted chocolate or peanut butter as a glue to hold them on. 
  8. Refrigerate for 10 minutes so the cookies firm up. 
  9. Place chocolate chips in the corner of a zip-lock bag. Microwave for 20 seconds, knead and repeat until chocolate is melted. Clip a very small piece off the corner of the bag to allow for piping, and draw 8 legs on each spider cookie. Return to the refrigerator for 10 minutes to allow legs to set.

Halloween Eye of Newt

Ingredients: 
  • 12 eggs 
  • 1 Tbsp sweet pickle relish 
  • 1 Tbsp mayo 
  • 1 pinch celery salt 
  • 1 Tbsp prepared yellow mustard
  • 2 drops green food coloring
  • 1 (6 oz) can sliced black olives, drained 
  • 1 drop red food coloring 

Directions: 
  1. Hard boil the eggs. Rinse under cold water and let cool completely. Peel and slice the eggs in half lengthwise. 
  2. Remove the yolks from the eggs and place them in a bowl. Mix in the relish, mayo, celery salt, mustard and food coloring. 
  3. Spoon this mixture into the egg whites and place them on a serving tray. Round the top of the filling using a spoon.
  4. Place an olive slice on each yolk to create the center of the eye. Dab a tiny bit of mayo in the center of the olive as a finishing touch. 
  5. Using a toothpick dipped in red food coloring, draw on lines to make the eyes look bloodshot.

Graveyard Pudding Cups

Ingredients: 
  • 1 pkg. dark chocolate instant pudding, prepared 
  • 1 pkg. chocolate instant pudding, prepared
  • 1 container (8 oz) Cool Whip 
  • 30 chocolate sandwich cookies, crushed
  • gummy worms
  • Mint Milano Cookies, or other oval shaped cookies
  • Black frosting pen for writing 
  • Candy corn pumpkins

Directions:  
  1. Prepare pudding according to directions on the box.
  2. In small, clear cups, layer the puddings and cool whip. Place a gummy worm or two in between layers. 
  3. Top the cup off with some crushed chocolate sandwich cookies. 
  4. Using the frosting pen, write "RIP" on each oval cookie. Then place one in each cup of pudding. 
  5. Add a candy corn pumpkin for garnish.

Stuffed Jack-O-Lantern Bell Peppers

Ingredients: 
  • 6 orange bell peppers
  • 1 lb ground beef 
  • 1 egg 
  • 4 slices whole wheat bread, cubed 
  • 1 small onion, chopped
  • 1 small tomato, diced 
  • 2 cloves garlic, minced
  • 1/2 c chili sauce 
  • 1/4 cup prepared yellow mustard 
  • 3 Tbsp Worcestershire sauce 
  • 1/4 tsp salt 
  • 1/4 tsp pepper

Directions:   
  1. Preheat oven to 350°F. Grease an 8x8 inch baking dish. 
  2. Lightly mix together the ground beef, egg, bread cubes, onion, tomato, garlic, chili sauce, mustard, Worcestershire sauce, salt and pepper in a bowl. 
  3. Wash the peppers and cut a jack-o-lantern face in each one with a sharp paring knife, making triangle eyes and nose, and a pointy teeth smile.
  4. Slice off the tops of the peppers and scoop out the seeds and cores. 
  5. Stuff the peppers lightly with the beef stuffing, and place them into the prepared baking dish so they lean against each other. 
  6. Bake in the preheated oven until the peppers are tender and the stuffing is cooked through and juicy, about 1 hour.

2. Hidden Lakes - The Hidden Lakes Course has been ranked by USA Today as one of the best nine-hole courses in the U.S. The course features lush zoysia fairways and large bentgrass greens.

Bear Creek Valley - Bear Creek Valley Golf Club meanders through 250 acres of colorful Ozark forest, meadows and scenic valleys along “Little Bear Creek”. The course has zoysia fairways, subtle L93 bentgrass greens and multiple tee settings, which will insure an enjoyable, yet challenging, round of golf.

4. Deer Chase - Deer Chase offers a challenging track through the beautiful Auglaize River valley and surrounding hills. The course features Bermuda fairways overseeded for early spring green-up, multiple zoysia tees and the largest bentgrass green settings in the area.

5. The Cove - With 72 bunkers, rolling hills and water coming into play on 9 of the holes, this par-71 course is anything but tame. Breathtaking views of the Lake of the Ozarks and a classic design leave golfers wanting another shot at this legendary golf course.

6. The Ridge - Many golfers refer to the course’s altitude drops and generous landing areas as “player-friendly”. This par-72 course offers rolling hills, natural rock outcroppings, native wildflowers, and beautiful views of the Lake. The Ridge offers a challenging layout for golfers of all skill levels.

7. Osage National - The course at Osage National is laid out on beautifully forested, rolling terrain and surrounded by lakes, creeks and the imposing bluffs of the Osage River. This tranquil setting provides the backdrop for a challenging, enjoyable golf experience.

8. Old Kinderhook - Spectacular vistas, elevations and a championship layout meanders through the Ozark hills at Old Kinderhook. It turns the rolling topography, rock waterfalls and flowering trees into one of the Midwest's finest golf courses. Each hole captures a special aspect of the terrain and offers an experience to delight golfers of all skill levels.

9. Lake Valley - The gently rolling terrain at Lake Valley features player friendly fairways and quick, undulating greens making this a course that is enjoyable for the average player, yet challenging for the skilled golfer.
