3 Tasty Recipes to Try This Easter

Easter weekend is almost here, and many of you are preparing for dinner guests. Signature Easter dishes include ham, deviled eggs and something sweet. Today's blog from Summerset Inn Resort takes these simple dishes and adds a delicious twist. Surprise your guests with these tasty recipes:

Pull-Apart Easter Blossoms

Ingredients: 
  •  6 cups Flour 
  • 1 Tbsp Rapid Rise Yeast
  • 1/2 cup Sugar 1
  • 1/4 tsp Salt 
  • 1/2 cup Unsalted Butter
  • 1 3/4 cups Milk 
  • 3 Eggs, beaten 
  • 1 Lemon, zested and juiced 
  • 1 Egg Yolk
  • 1 Tbsp Water 
  • 1/2 cup Seedless Raspberry Jam 
  • 1 cup Confectioners' Sugar

Directions: 
  1. In a large bowl, whisk together 4 cups of flour, yeast, sugar and salt. Set aside.
  2. In a saucepan over low heat, melt the butter with the milk until he mixture is warmed to about 110°F.
  3. Gradually whisk about 1/3 of the butter mixture into the beaten eggs, then return the egg mixture back to the saucepan. Stir in the lemon zest. (Set aside the lemon juice.)
  4. Pour the liquid ingredients into the flour mixture and stir until thoroughly combined. Add enough flour to make a soft dough.
  5. Turn the dough onto a floured surface and knead until smooth and elastic, about 8-10 minutes. 
  6. Place the dough in an oiled bowl, turning the dough around to cover the surface lightly with oil.
  7. Cover the bowl with plastic wrap and allow to rise in a warm place until doubled, about 1 hour. 
  8. Punch down the dough and let rest for about 10 minutes. 
  9. Divide the dough in half, rolling each half into a round ball. 
  10. On a floured surface, roll each ball into a 12 inch circle.

  11. Place a drinking glass face down in the center of the circle to avoid cutting too far into the center. 
  12. Then cut the dough with a knife, from the edge to the rim of the glass, into quarters. Then cut each quarter into 5 narrow strips. (The center of the dough, where the glass sits, will remain uncut.) 
  13. Remove the drinking glass, and now you should have 20 strips surrounding the uncut center of the dough. 
  14. Pick up 2 adjacent strips and twist them together about 4 times, pinching them at the ends. Gently coil the twist and place into the middle of the circle, where the drinking glass was. 
  15. Continue creating twists and coiling them into circles, placing them around the center one to form a flower shape. The finished bread will have 9 coils (petals) surrounding the center one. 
  16. Repeat steps 11-15 with the other 12 inch circle of dough. 
  17. Grease a baking sheet and place the shaped breads onto the baking sheet. Cover with a clean kitchen towel and place in a warm spot to rise until almost doubled, 30-45 minutes. 
  18. Preheat oven to 375°F. 
  19. Beat the egg yolk with water in a small bowl and brush the mixture over both the breads. 
  20. Bake in the preheated oven until the breads have turned golden brown, about 25 minutes. Allow to cool. 
  21. Use your fingers to gently deepen the indentations in the center of each petal. Fill each with about 1/2 to 1 tsp of raspberry jam. 
  22. Mix the lemon juice and confectioners' sugar in a bowl to form a glaze, and drizzle the glaze in thin lines over both breads.
  23. Allow the glaze to set before pulling the petals apart and serving.

Bacon Cheddar Deviled Eggs

Ingredients: 
  •  12 Hard-Boiled Eggs
  • 1/2 cup Mayo 
  • 1/4 tsp Pepper 
  • 1 Tbsp Honey Mustard 
  • 2 Tbsp Finely Shredded Cheddar Cheese
  • 4 Bacon Strips, cooked and crumbled

Directions: 
  1.  Slice the eggs in half length-wise. 
  2. Remove the yolks and set the whites aside. 
  3. In a small bowl, mash the yolks and stir in the other ingredients. 
  4. Stuff the mixture into the egg whites. 
  5. Refrigerate until serving.

Orange Baked Ham

Ingredients:
  •  A 14-16 lb Spiral-Cut Smoked Ham on the Bone, fully cooked
  • 6 Garlic Cloves 
  • 8 1/2 ounces Orange Marmalade 
  • 1/2 cup Dijon Mustard 
  • 1 cup Light Brown Sugar, packed 
  • 1 Orange, zested 
  • 1/4 cup Orange Juice, freshly squeezed

Directions: 
  1. Preheat the oven to 350°F. Place the ham in a heavy roasting pan. 
  2. Mince the garlic in a food processor. Add the other ingredients and process until smooth.
  3. Pour the glaze over the ham and bake for 1 hour, until the ham is fully heated and the glaze is well browned. 
  4. Serve hot or at room temperature.

4 Sweet Treats Perfect for Valentine's Day

Valentine's Day is just around the corner! How are you planning to celebrate with your loved ones? While you could just buy a box of chocolates for that special someone, creating something yourself is a great way to show much you care. In today's blog, Summerset Inn Resort brings you several sweet treats perfect for Valentine's Day. Whether you're making something for your children or your spouse, these recipes are such to bring a smile to their face!

Valentine's Day Chocolate Trail Mix

Recipe From: Midwest Living

Ingredients:
  • 1 cup Granola
  • 1 cup Salted Pretzel Sticks, coarsley crushed
  • 1 cup Semi-sweet Chocolate Pieces
  • 1 1/2 cups Dried Cranberries
  • 1 cup Cocoa-Covered Almonds
  • 1 cup Dried Cherries
  • 1/2 cup Freeze-dried Raspberries

Directions:
  1. Line two baking sheets with waxed paper and set aside.
  2. Place the pretzels in a small bowl and the granola in a separate small bowl.
  3. In a glass measuring cup, place 2/3 of the cup of the chocolate pieces. Microwave on high for 30 seconds. Stir the chocolate and continue to cook on high for 20-30 seconds at a time, stirring regularly, until the chocolate in melted and smooth.
  4. Pour half of the melted chocolate over the granola and the other half over the pretzels. Stir each bowl until evenly coated.
  5. Turn the contents of each bowl over onto the baking sheets. Let stand at room temperature 1 to 2 hours or until set.
  6. Break or chop the chocolate-coated granola and pretzels into bite size pieces.
  7. Transfer the pieces to a large bowl and add the dried cranberries, almonds and dried cherries. Stir in the raspberries just before serving.


Strawberry Chocolate Chip Sweetheart Cookies

Ingredients:
  • Strawberry Cake Mix
  • 1 tsp Baking Powder
  • 2 Eggs
  • 1/3 cup Vegetable Oil
  • 1/2 tsp Vanilla Extract
  • 2 cups Milk Chocolate Chips Valentine Sprinkles (optional)

Directions:
  1. Preheat the oven to 350°F.
  2. Mix together the cake mix, eggs, baking powder, vegetable oil and vanilla in a large mixing bowl. Mix using an electric mixer on medium speed until well combined.
  3. Mix in the milk chocolate chips.
  4. Drop one inch balls onto a baking sheet lined with parchment paper.
  5. Bake for 10 minutes.
  6. Let cool on the baking sheet for about 5 minutes before sprinkling the valentine sprinkles on top.
  7. Let cool on a wire rack.

Chocolate Truffles

Ingredients:
  • 6 oz Semi-sweet Baking Chocolate, chopped
  • 2 Tbsp Butter or Margarine
  • 1/4 cup Whipping (heavy) Cream
  • 1 Tbsp Shortening
  • 1 cup Semi-sweet or Milk chocolate Baking Chips
  • Finely chopped nuts or candy decorations (optional)

Directions: 
  1. Cover a cookie sheet with aluminum foil.
  2. Melt baking chocolate in a 2-quart saucepan over low heat. Stir in butter until melted. Then stir in the whipping cream.
  3. Refrigerate the mixture for 10 to 15 minutes, just until thick enough to hold a shape.
  4. Drop mixture by teaspoonfuls onto the cookie sheet. Shape into balls and then freeze for 30 minutes.
  5. Heat shortening and chocolate chips over low heat, stirring constantly until chocolate is melted and the mixture is smooth. Remove from heat.
  6. Dip the balls, one at a time, into the chocolate.
  7. Place back on the cookie sheet.
  8. Immediately sprinkle with finely chopped nuts or decorating candies.
  9. Refrigerate the truffles about 10 minutes or until coating is set.

Red Velvet Popcorn 

Recipe From: Sarah Hearts

Ingredients:
  • 2 oz Cream Cheese, softened
  • 1 tbs Corn Syrup
  • 1/2 cup Powdered Sugar
  • 1 tsp Vanilla
  • 1 bag Popcorn, popped
  • 4 Red Velvet Cupcakes, unfrosted

Directions:
  1. In a large mixing bowl, combine the cream cheese, corn syrup, powdered sugar and vanilla. Use a hand mixer to combine into a creamy glaze.
  2. Fold the bag of popcorn into the cream cheese glaze.
  3. Crumble the red velvet cupcakes into the mixing bowl and use a spatula to gently fold the cake crumbs into the popcorn mixture.
  4. Spread the mixture on a baking sheet lined with waxed paper, parchment paper or a silicone baking mat.
  5. Allow the mixture to harden, about 10 minutes.
