Turkey Casserole
If you have lots of leftovers, more than just turkey, try this turkey casserole. Tired of eating turkey already? This recipe can be frozen and eaten at a later date!

Ingredients:
- 3 Cups Leftover Stuffing
- 4 Cups Leftover Turkey
- 2 Cups Leftover Corn (and/or other veggies)
- 3 Cups Leftover Mashed Potatoes
- 1 Cup Shredded Cheddar Cheese
- 3/4 Cup Mayo (or Miracle Whip)
Directions:
- Mix the turkey, corn and mayo together in a bowl.
- Mix the potatoes and the cheese together.
- In a large foil pan, layer the ingredients starting with the stuffing in the bottom.
- Then add the layer of your turkey mixture.
- Top that with the layer of mashed potatoes and cheese.
- Either cover with foil and freeze OR place it in the oven at 375° for 30 to 40 minutes or until heated.
Slow Cooker Turkey Noodle Soup
A great way to get the most out of your Thanksgiving turkey is to use the leftover carcass to create a delicious turkey noodle soup!

Ingredients for Stock:
- 1 Turkey Carcass
- 1 Onion
- 1 Celery Stalk
- 1 Carrot
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 Bay Leaf
- 1/2 tsp Poultry Seasoning
- 2 tsp Instant Chicken Bouillon Granules
- 12 Cups Water
Ingredients for Soup:
- 2 Onions
- 1 Garlic Clove
- 2 Carrots, peeled and chopped
- 2 Stalks Celery, chopped
- 1/2 tsp Dried Thyme
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 Cups Turkey, shredded
- Noodles, uncooked
- 2 Tbsp Fresh Parsley Leaves, chopped
Directions:
- To make the stock, place the turkey carcass is your slow cooker. Add all ingredients listed above for the stock. Cook on low overnight.
- The next morning, strain the broth and pour it back in the slow cooker.
- Remove turkey meat from the bones and set aside.
- For the soup, combine onions, garlic, carrots, celery, thyme, salt and pepper with the broth in the slow cooker.
- Cook on high for 4 hours.
- Add turkey, noodles and parsley.
- Cook another 1/2 hour.
- Enjoy your turkey soup!
Turkey Salad
For a quick lunch option, consider using leftover turkey to create a turkey salad sandwich!

- 1 1/2 Cups Cooked Turkey, diced
- 1/2 Cup Apple, unpeeled and diced
- 1/2 Cup Mayo (or Miracle Whip)
- 1 1/2 tsp Curry Powder
- 1/4 tsp Ground Ginger
- 1/4 tsp Pepper
- 1 Stalk Celery, chopped
- 2 Green Onions, chopped
Directions:
- In a bowl, mix all ingredients together. Refrigerate.
- Spread the mixture between 2 slices of your favorite bread, and voila, you have a delicious turkey salad sandwich!
